Three-Cornered Leek is bountiful at the moment and a great plant to look out for during your lockdown daily outing, helping to distract us all from the obvious!
The flavour of the young leaves (which look a little like white bluebells, but with a green stripe through the white petals) are similar to a cross between spring onion and chives, so use them fresh, with little cooking needed, chopped through mash, add to fried mushrooms on toast, soups and pesto - the possibilities are endless!
A useful identification tool is to feel for triangular cross section of the flower stems (hence three-cornered leek!).
